Whiskey is made by distilling grain mash. It must have an alcohol content of less than 94.8% and have been stored in wooden barrels of around 700 liters for at least three years. Scotch, on the other hand, can only be called whiskey that is distilled and matured in Scotland. It is a protected designation of origin, similar to that of Armagnac, Cognac or Champagne.
